Hands down my favorite raw dessert is the fantastic raw brownie.
Rolling them into little balls and coating them in coconut is even better.
They have become my ultimate raw comfort treat without feeling like I was eating chocolate flavored rabbit food. I’ve experimented with several different kinds of nuts as the base. So far my favorite is the cashew or walnuts, or a combination of the two, but you can also use almonds or pecans too. It’s a versatile recipe.
Raw Brownies
16 oz. Raw Walnuts, soaked for 8 hours and rinsed
10-15 small dried Dates (3-4 large)
1 Cup Unsweetened Cocoa Powder or Raw Cacao Powder
A pinch of Himalayan or Celtic Sea Salt
1/4 Cup Raw Agave Nectar (regular is okay too if you can’t find the raw version)
1/3 Cup Raw Unsweetened Coconut Flakes
In the food processor grind the walnuts to a fine meal. Add dates and grind again until evenly incorporated with the nuts. Next add the cocoa or cacao powder and salt, then grind until blended. Lastly add the Raw Agave Nectar and grind until it forms a stiff ball. If necessary add a bit of water to make it stick better. Form and roll into bite sized balls. Roll in the coconut flakes. Store in a airtight container or ziplock bag in the fridge. These may also be frozen for a great chewy treat. They will not freeze solid because of the nuts.
